Note that Honda does not sell a collar by itself; it’s part of the shift boot assembly. That said, any shift knob that is cut flush with the drill will work with the 2020+ Type R. Shift knobs that are counterbored or countersunk may not work with the 2020 shift collar. However, using the 2017-19 retaining nut can allow these to work.

Ethanol is indeed the biggest bang for buck mod anyone can run. FBOs won't add much until you've got a bigger fuel pump or turbo. A downpipe and flex fuel kit alone can easily get you to 400 whp/tq, whereas full boltons won't get you past 380 on an aggressive tune.
